Mendocino Garden Salad

  • Salad:
  • 8 Cups leaf lettuce; torn into pieces
  • 1/2 medium cucumber, grooved and thinly sliced
  • 1 Cup red cabbage; shredded
  • 4 green onions, slivered lengthwise
  • 1/2 cans red pepper; slivered
  • Garlic Red Wine Vinegar Dressing:
  • 2 Tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 clove garlic; minced or pressed
  • 1/4 teaspoon dried marjoram
  • 1/8 teaspoon salt
  • 1/8 teaspoon seasoned pepper
  • 2 Tablespoons olive oil
  • 1/4 Cup salad oil
  1. To prepare salad, lightly mix lettuce, cucumber, and red cabbage in a bowl; set aside.
  2. To prepare Garlic Red Wine Vinegar Dressing, mix vinegar, mustard, garlic, marjoram, salt, and pepper in a medium bowl. Using a whisk or fork, gradually mix in oil until well blended and slightly thickened.
  3. Mix lettuce mixture lightly with dressing. Top with onions and red pepper.
Salad Yield: 4 to 6 servings. Dressing Yield: 1/3 cup.
