Baked Rockfish

  • 1/2 Cup Basil-Garlic Sauce; * see note
  • 3 Tablespoons lemon juice
  • 1 carrot; chopped
  • 1 leek; chopped
  • 2 Tablespoons firm butter
  • 2 pounds rockfish or red snapper; drawn
  1. Heat oven to 375 degrees. Mix Basil-Garlic Sauce, lemon juice, carrot, and leek.
  2. Cut butter into small pieces. Place in rectangular baking dish, 13- by 9- by 2-inches. Place rockfish on butter. Spread vegetable mixture over fish.
  3. Cover and bake 40 minutes or until fish flakes easily with fork.
