Brie with Caramelized Pecans
Cuisine: American
Author: Epicurus.com Kitchens
Ingredients
  • 2/3 Cup brown sugar
  • 1/3 Cup water
  • 1/2 Cup heavy cream
  • 4 Tablespoons unsalted butter
  • 1/2 Cup spiced pecans
  • 1 8-inch wheel ripe brie cheese; top rind cut off evenly
Instructions
  1. Combine the brown sugar and water in a heavy-bottomed saucepan and bring to a boil. Continue to cook over medium heat until the mixture reaches soft-ball stage (240 degrees F.) Test with a candy thermometer about 4 minutes from the time the mixture begins to boil.
  2. Let the mixture cool slightly and stir in the cream. Continue to boil another 5 minutes or until the mixture is slightly thickened and glossy. Remove from heat and stir in the butter. Fold in the pecans.
  3. Pour the caramel mixture evenly over the top of the cheese, letting a little of it run down the sides.
  4. Make sure the pecans are neatly piled on top of the cheese, and have not fallen over the sides.
Notes
You can substitute Camembert for Brie.
