Country Molasses Pie

Pastry Crust:
  • 3/4 Cup flour
  • 1 Tablespoon butter
  • 1/4 Cup water; boiling
  • 1/2 Cup sugar
  • 1/4 Cup molasses
  • 1/4 teaspoon baking soda
  • 1 Cup flour
  • 1/3 Cup plus 1 Tablespoon brown sugar
  • 2 Tablespoons unsalted butter
  • 1/4 teaspoon nutmeg, grated
  • 1/2 teaspoon cinnamon
  1. Mix the first 3 ingredients together, using the hands, and pinching mixture until very fine.
  2. Roll out and line pie dish (deep dish is recommended).
  3. Add the water to the molasses and soda and beat until this is foamy and rises.
  4. Pour this into a pie pan lined with pastry crust (a deep pan is preferable) and taking a spoon, spread the molasses filling evenly.
  5. Mix the dry Topping ingredients and cut in the butter until you have a very dry, crumbly mixture that does not clump. Sprinkle over the top of the pie.
  6. Bake at 325 degrees F. for 30 minutes. Set out to cool, but remember to cover with a net to keep the flies away. Serve cool, at room temperature.
Also known as Shoofly Pie, this sweet confection may be served with vanilla ice cream, which surprisingly cuts the pie's incredible sweetness.
