A delicious start to your day, or part of a great brunch, this exceptional omelette is very filling.

Earl's Potato Omelette
Recipe type: Breakfast
Serves: 1 omelette
  • 2 medium onions, peeled, sliced
  • 6 medium potatoes, peeled, boiled
  • 2 Tablespoons lard or oleo
  • 3 eggs, beaten
  • salt and pepper
  1. In a skillet, melt shortening or oleo. Saute onions until opaque.
  2. Slice potatoes while onions are cooking. Add potatoes to skillet. Salt and pepper, to taste.
  3. Add beaten eggs and turn several times with pancake turner to mix seasoning and eggs into onions and potatoes.
  4. Cook under medium heat until firm.
A very flexible recipe to which you may add many optional ingredients from Asparagus to Zucchini.

Alternatively, you can make this recipe in a greased baking dish and bake for 25 minutes at 350 degrees and serve it in squares as part of a brunch.
