Simply a great dressing for New Potato Salad.

Boil 3 pounds new potatoes (about 30 minutes) in a large pot with salted water. When done, rinse under cold water (in the pot) until potatoes are cool. Do not rush this.

Once cold, cut potatoes into slices or wedges.

Finely chop celery (including leaves), parlsey and mince two cloves garlic. Add celery and garlic to a bowl, with potatoes and toss. Add dressing and mix. Sprinkle with parsley. Serve.
