Cucumber Mint Raita
Recipe type: Salads and Dressings
Serves: 6
  • 1 cucumber
  • 1 Cup plain yogurt
  • salt, to taste
  • 2 teaspoons minced mint leaves
  1. Peel, seed and grate the cucumber. Combine it and the yogurt in a small bowl. Add salt to taste and the mint. Chill the raita until ready to serve.
This recipe yields 1 1/2 cups.

Each 1/4 cup: 27 calories; 68 mg sodium; 5 mg cholesterol; 1 gram fat; 2 grams carbohydrates; 2 grams protein; 0.10 gram fiber.
