Cubano Sandwich

  • 1 ciabatta roll
  • 1 Tablespoon aioli
  • 1 Tablespoon Dijon mustard
  • 2 slices Manchego cheese
  • 3 ounces Roasted Pork Loin, sliced thin
  • 3 ounces 12-month-aged Serrano ham, sliced
  • 4 cornichons, sliced thin
Roasted Pork Loin
  • 1 Tablespoon smoked paprika
  • 1 Tablespoon Cayenne
  • 2 Tablespoons garlic, minced
  • 1 Tablespoon parsley, chopped
  • 1/4 Cup olive oil
  • 1 6-Pound pork loin
  • 2 Tablespoons Kosher salt
  1. Slice roll in half lengthwise. Spread bottom with aioli and top with mustard.
  2. Layer manchego, pork, Serrano ham and cornichons on bottom half and top with second half.
  3. Place sandwich on hot panini press; cook until warm in center and crisp on outside. Slice in half and serve.
Roasted Pork Loin
  1. Preheat oven to 350 degrees F.
  2. Combine paprika, cayenne, garlic, parsley and oil; marinate pork loin overnight, refrigerated.
  3. Remove pork from marinade and season with salt. Roast until internal temperature reaches 155 degrees F. Let cool; slice thin.
