Creamy Rice Pudding

Creamy Rice Pudding

Ingredients
  • 1 1/2 Cups cooked rice
  • 2 Cups skim milk, divided
  • 2 Tablespoons sugar
  • 4 packages sugar substitute, such as Equal or Splenda
  • 1 large egg
  • 1/2 Cup golden raisins
  • 1 Tablespoon reduced calorie butter
  • 1/2 teaspoon vanilla extract
  • 1 dash ground cinnamon
Instructions
  1. In medium-size saucepan over medium heat, combine rice, 1 1/2 Cup milk, sugar and sugar substitute.
  2. Cook, stirring occasionally, 15 to 20 minutes or until thick and slightly creamy.
  3. Beat remaining 1/2 cup milk and egg; stir into rice mixture.
  4. Stir in raisins.
  5. Without letting mixture boil, continue cooking 2 minutes.
  6. Stir in butter and vanilla. (Mixture will thicken on standing.)
  7. Transfer to serving bowl; sprinkle with cinnamon.
  8. Serve warm or cover with plastic wrap and refrigerate.
  9. Makes 8, 1/2 cup servings.
