Creamed Chipped Beef
Buttering the toast adds an extra dimension to this classic. Use a hearty, thick country-style white bread, or your choice of other breads to make the toast.

  • 1 package sliced dried beef (2 1/4 ounces)
  • 2 Tablespoons butter
  • 2 Tablespoons all-purpose flour
  • 1 Cup milk
  • 1/4 teaspoon Worcestershire sauce
  • chives, finely chopped, for garnish
  1. Cut or tear dried beef into bite-size pieces. Set aside.
  2. Melt butter in saucepan over low heat. Sprinkle in flour; stir until smooth. Stir in beef. Stir for 1 to 2 minutes.
  3. Add milk slowly, stirring constantly. Stir in Worcestershire. Increase heat to medium and cook, stirring, until mixture thickens and comes to a boil.
  4. Spoon over country bread toast, garnish and serve.
