  • 4 medium ears of corn
  • 2 Tablespoons butter
  • 2 Tablespoons fresh lime juice
  • 1/2 teaspoon pepper (optional)
  • water for boiling
  1. Using a cleaver or large knife, cut corn into 1-inch lengths.
  2. In a large pot, bring water to boil over high heat. Add corn wheels; cover and boil 12 minutes.
  3. Melt butter in a saucepan, mix with lime juice.
  4. Transfer corn to serving platter and drizzle with lime-butter. Sprinkle with pepper, if desired.
For an added twist, after the corn is boiled, remove it, drain and place on the grill to caramelize its natural sugars. Add the lime butter glaze after.

The corn-wheels may also be skewered after boiling for easier grilling and serving.
