The smokey flavor of Chipotle pairs well with the subtle allure of chocolate in this illustrious Chocolate Chipotle Bread Pudding.  Simply heavenly.

Chocolate Chipotle Bread Pudding

  • 1/4 pound unsweetened chocolate
  • 1/2 pound unsalted butter
  • 2 Cups whole milk, scalded
  • 2 Cups sugar
  • 2 eggs
  • 1/2 Tablespoon Vanilla extract
  • 1/3 Cup Chipotle-Pepper Adobo sauce (recipe follows)
  • 2 pounds dense chocolate cake, white cake and bread (brioche or challah are ideal)
  • warm chocolate ganache, as desired
Chipotle-pepper Adobo Sauce
  • 1 7-ounce can of chipotle peppers in adobo sauce
  1. In double boiler, melt chocolate and butter. Whisk in hot milk.
  2. In bowl, combine sugar, eggs and vanilla. Whisk into chocolate mixture. Whisk in adobo.
  3. In large container, mix chocolate mixture and cake and bread cubes. Coat a non-reactive pans with nonstick spray. Divide mixture among pans.
  4. Bake in oven at 325 degrees F until top is set and no longer looks wet, about 40 minutes.
  5. Serve warm with ganache.
Chipotle-pepper Adobo Sauce
  1. Strain can of chipotle peppers in adobo sauce over bowl, catching sauce in pan below. Pour 2/3 can of water over peppers and mix with adobo sauce. This is the part you will use. Reserve peppers for another use.
