Recipe type: Baked Goods
Cuisine: American
Serves: 2 cakes, 20 servings
  • 3 1/2 Cups flour, all-purpose
  • 2 1/4 Cups granulated sugar
  • 1 Cup brown sugar, firmly packed
  • 1 Tablespoon baking powder
  • 1 1/2 teaspoons baking soda
  • 1 1/2 Cups cocoa powder
  • 3/4 teaspoon salt
  • 2 Cups low-fat buttermilk
  • 1/2 Cup vegetable oil
  • 4 eggs, large
  • 1 1/2 Tablespoons vanilla extract
  • 1 1/2 Cups black coffee
  1. Preheat oven to 350 degrees F. Grease two, 9-inch springform pans or spray with non-stick cooking spray. Set aside.
  2. Blend flour, granulated sugar, brown sugar, baking powder, baking soda, cocoa powder and salt in a 6-quart mixing bowl. Set aside.
  3. Combine buttermilk, oil, eggs, vanilla extract, and coffee in a mixing bowl. Using the whisk attachment, stir until well blended.
  4. Add flour mixture to buttermilk mixture, mix on medium speed, until smooth (about 2 minutes).
  5. Pour 1/2 of the batter into each pan.
  6. Bake for 50-60 minutes, or until the center of the cake is fairly firm to the touch. Let cake cool in pan for 10 to 15 minutes. Remove and wrap with plastic wrap until ready to serve.
  7. Serve warm with a dollop of sweetened whipped cream.
Warm cakes may be topped with a layer of semisweet chocolate ganache and allowed to cool.

Granulated sugar may be replaced by granulated artificial sweetener.
