Chilled Artichoke Soup

Serves: 4 to 6 servings
  • 19 ounces artichoke hearts, drained
  • 1 1/2 Cups chicken broth
  • 1 Tablespoon lemon juice
  • 1/2 teaspoon salt
  • 1 dash of white pepper
  • 1 Cup 18% light cream or half and half
  • thin slices of lemon
  1. Puree artichokes and chicken broth. Place in saucepan with lemon juice, salt and pepper. Heat just to boiling.
  2. Remove from heat and stir in cream.
  3. Chill soup.
  4. Garnish with lemon slices.
