Cheese Muffins

  • 1 1/2 cupsful flour (plain)
  • 1/4 teaspoonful salt
  • 1 egg
  • 1/2 Cupful grated cheese
  • 4 teaspoonfuls baking-powder
  • 3/4 Cupful milk
  1. Beat the egg lightly, add the salt and milk. Sift flour and baking-powder together, and then put in the grated cheese.
  2. Make into a dough with the liquid, beat well and roll out. Cut into rounds, brush with beaten egg, and bake for 10 minutes in a sharp oven. They are delicious split, spread with butter and eaten hot or cold, preferably hot. G7/235C/450F
This recipe, best made with a cheese like cheddar or something solid and grateworthy, can also be adapted by adding such items as bacon, diced ham, sauteed onions, scallions, or herbs, or any combination. These are perfect as either a breakfast muffin or as a side dish with your dinner (make them small for this purpose). We made tried them with some diced apples tossed with sugar, lemon juice and cinnamon, with sharp cheddar - simply wonderful.

Serve with room temperature butter.
