A simple, yet rich filling, this is perfect for breads, appetizers and savory rolls.

Cheese Filling

Serves: 2 1/4 Cups
Ingredients
  • Enriched White Sauce, see Recipe
  • 1 Cup shredded aged Cheddar cheese
  • salt and white pepper, to taste
  • 3 egg whites
Instructions
  1. Prepare white sauce as directed, then stir in cheese. Taste and add salt and pepper as needed. Let cool to room temperature.
  2. In a bowl beat egg whites until stiff peaks form. Fold egg whites into sauce mixture.
Notes
Made with 3 egg yolks instead of 2 yolks.

Yield: 2 1/4 cups.
