This wonderful combination of broccoli and cauliflower, two vegetables in the same family, with a creamy garlic-based dressing makes an excellent side dish in warm or cold weather.

Cauliflower and Broccoli Salad
Recipe type: Salads and Dressings
Serves: 6 to 8
  • Salad:
  • 1 head cauliflower, peel stems and cut into 1" pieces
  • 1 bunch broccoli, peel stems and cut into 1" pieces
  • Creamy Garlic Dressing:
  • 4 cloves garlic
  • 1 egg
  • 1 Tablespoon Dijon mustard
  • 3/4 Cup oil
  • 1 Tablespoon lemon juice
  • 1 Tablespoon white wine vinegar
  • 1 teaspoon Kosher salt
  • 1/8 teaspoon white pepper
  1. To prepare salad, place florets and stems in basket over boiling water.
  2. Steam until a knife inserted will easily pierce vegetable (6 to 8 minutes). Remove from steamer and cool.
  3. To prepare Creamy Garlic Dressing, drop a garlic in a food processor and puree. Add egg and mustard.
  4. With machine still running, add oil in a thin stream until mixture is slightly thickened. Season with lemon juice, vinegar, salt, and pepper. Toss salad mixture with dressing and serve.
Salad Yield: 6 to 8 servings. Dressing Yield: 3/4 cup.
