- 300 ml coconut milk
- 2 ripe mangoes, peeled, deseeded and chopped
- 6 Tablespoons lime juice
- 1 teaspoon grated lime zest
- 100g caster (superfine) sugar
- 1 teaspoon vanilla extract
- Place all the ingredients into a blender or processor and blend until smooth. Serve in glasses over ice.
