Buffalo and Beans
Recipe type: Wild Game
Serves: 8
  • 1/4 Cup vegetable oil
  • 1 green bell pepper; chopped
  • 1 red bell pepper; chopped
  • 2 Cups sliced mushrooms
  • 4 medium onions; sliced
  • 1 1/2 pounds buffalo meat; ground
  • 1 1/2 pounds lean ground beef
  • 28 ounces kidney beans (2 cans)
  • 28 ounces crushed or stewed tomatoes (1 can)
  • 2 cloves garlic; crushed
  • 1/4 Cup chili powder
  • spices and herbs, to taste (suggested oregano, cumin, basil, cilantro, Cayenne)
  1. Saute vegetables in oil. Add meat and cook until no longer pink. Add beans, tomatoes and spices/herbs. Simmer uncovered until liquid begins to evaporate and chili thickens. Skim excess fat if necessary. Continue to simmer covered for several hours to allow flavours to blend. This recipe yields 8 to 12 servings.
