Bubble and Squeak is an exceptional way of preparing potatoes and cabbage into a flavorful side dish with bacon adding extra flavor.

  • 5 medium potatoes; boil, peel; diced
  • 1/2 pound bacon; 1-inch pieces
  • 1 head cabbage; cut 1/4-inch into slices
  • 1/2 Cup water
  • salt, to taste
  • extra water
  1. In large iron skillet brown bacon. Remove the bacon and pour off all grease except 2-3 tablespoons.
  2. Add cabbage and 1/2 cup water. Cover and cook over low heat about 20 minutes. Add potatoes along with the bacon. Salt to taste.
  3. Cook another 10 minutes. Extra water may be added while cabbage is cooking, but during last few minutes let mixture brown.
An old English dish, named for the sounds the ingredients make while cooking (or from the sound one's stomach makes after eating it). Some sources say it was originally cold boiled beef and chopped cabbage, others claim it was originally mashed potatoes and cabbage, while some claim it originally contained all three.

Today it is typically made from leftover potatoes and cabbage fried together.
