This extraordinary, simple and delightful syrup was created for Halvah, a sesame confection, but it is useful in a thousand other ways. Try it as a syrup for sodas, on baklava, to moisten cakes or surprisingly, to mix cocktails. You will make it regularly, and use every drop.

Brandied Sugar Syrup
Recipe type: Beverages
Serves: 36
  • 2 Cups sugar
  • 3 Cups water
  • 1 whole clove
  • 3 Tablespoons Brandy
  1. In a saucepan over medium-high heat, combine sugar, the water, and clove.
  2. Bring to a boil, stirring to dissolve sugar. Reduce heat and simmer 10 minutes, stirring occasionally. Remove from heat, stir in brandy, and cool to room temperature.
  3. Pour over Baked Halvah.
