Bison Steak Diane
Recipe type: Wild Game
Serves: 4
  • 4 bison lion strip-steaks
  • 3 teaspoons lemon juice
  • 1 Tablespoon chopped chives
  • 3 ounces butter
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon Mustard
  • sliced fresh mushrooms; for garnish
  1. Pound the steaks until 1/2-inch thick, season well and briefly pound again. Melt the butter in a pan and fry the steaks quickly over a high heat for 2 to 3 minutes each side, transfer to a hot serving dish. Put the remaining ingredients into the pan, bring to a boil, spoon over the steaks, garnish with sliced fried mushrooms, if desired. This recipe yields 4 servings.
