Berry Gelatin Salad

Serves: 6
  • 1 container Oregon strawberries*
  • 1 package strawberry-flavored gelatin (6 ounces or two 3-ounce packages)
  • 2 Cups boiling water
  • 1/2 Cup dry white wine
  • 1 banana; peeled and sliced
  • lettuce; for serving
  1. * Note: Raspberries, Blackberries, or Boysenberries may be substituted.
  2. Drain berries; reserve syrup. Dissolve gelatin in water; add reserved syrup and wine. Chill until mixture begins to thicken. Add drained berries and banana. Pour into 3 1/2-cup mold. Refrigerate until firm.
  3. Unmold onto lettuce-lined platter.
This recipe yields 6 servings.

Serving Tip: Berry Gelatin Salad can be served with dairy sour cream, lemon-flavored yogurt, or your favorite salad dressing.
