Millet is similar to couscous, and served as a side dish or base for other dishes. Be creative and make your own specialty from this basic recipe.

Basic Millet
Recipe type: Grains
Serves: 6
  • 1 Cup uncooked millet
  • 2 Cups vegetable broth
  • salt
  • ground black pepper
  1. Place millet in a large, heavy pot. Stirring frequently, toast over medium heat until golden. Add broth and salt and pepper to taste.
  2. Bring to a boil, cover and reduce to a simmer. Cook about 20 minutes, until the liquid is absorbed. Remove from heat and let sit, covered, for 10 minutes.
  3. Fluff with a fork; adjust seasonings.
  4. Yields 6 servings.
Try making this basic recipe and adding chopped, cooked vegetables such as carrots, celery, peas, broccoli, asparagus, bell pepper, onion or others.
