Millet is similar to couscous, and served as a side dish or base for other dishes. Be creative and make your own specialty from this basic recipe.

- 1 Cup uncooked millet
- 2 Cups vegetable broth
- ground black pepper
- Place millet in a large, heavy pot. Stirring frequently, toast over medium heat until golden. Add broth and salt and pepper to taste.
- Bring to a boil, cover and reduce to a simmer. Cook about 20 minutes, until the liquid is absorbed. Remove from heat and let sit, covered, for 10 minutes.
- Fluff with a fork; adjust seasonings.
- Yields 6 servings.
