Basic Cheesecake

Ingredients
  • 2 Tablespoons butter
  • 2 Tablespoons sugar
  • 3 Cups crushed Graham crackers
  • 24 ounces cream cheese
  • 1 1/2 Cups sugar
  • 3 eggs
  • 2 teaspoons lemon rind
Instructions
  1. Mix Grahams, melted butter and sugar in a small bowl. Press mixture into a 9 inch pie pan. Bake at 350 degrees for 10 minutes.
  2. Mix cream cheese, sugar eggs and lemon rind until smooth.
  3. Pour into baked graham cracker crust and bake in at 350 degrees for 50 minutes or until slightly jiggley in the middle when shook.
  4. Cool before serving.
Notes
The less it is baked the creamier it will be. If your cheesecake is forming cracks, try baking in shallow water bath.

Cover with fruit toppings like blueberry or strawberry.
