Banana Nut Bread (Bisquick)

Banana Nut Bread (Bisquick)
Recipe type: Breads and Rolls
Serves: 8
  • 1/3 Cup vegetable oil
  • 1 1/2 Cups mashed ripe bananas ( 3 )
  • 1/2 teaspoon vanilla
  • 3 single eggs
  • 2 1/3 Cup bisquick baking mix
  • 1 Cup sugar
  • 1/2 Cup chopped nuts (optional)
  1. Preheat oven to 350 deg. F. Grease the bottom only of a 9 X 5 X 3" loaf pan. Beat all ingredients vigorously with a spoon for 30 seconds. Pour into pan. Bake until wood pick comes out clean. Cool for 5 minutes. Loosen sides from pan. Remove loaf.
This dish is a direct result of World War II, when rationing caused people to use everything they had, even bananas that were past their normal use. Nothing was wasted in those days.
