The parsnip is a greatly underrated root vegetable, full of wonderful flavor. Baked Parsnips Irish Style is a great side dish when served along side roasts or chops.

  • 2 1/2 pounds parsnips
  • 2 ounces butter or bacon fat
  • 3 Tablespoons chicken stock
  • salt and pepper
  • pinch nutmeg
  1. Peel parsnips, quarter, and remove any woody core. Parboil for 15 minutes.
  2. Place in an ovenproof dish. Add stock and sprinkle with salt, pepper and nutmeg.
  3. Dot with butter and bake for 30 minutes on a low shelf in a moderate oven.
Generally parsnips are baked in the same oven as the main meat dish, whose cooking temperature governs that of the parsnips.

Parsnips, cousins of the carrot, often have a very fibrous center that can be very difficult to eat. Simply trim this center out from the thicker portions of the vegetable and discard or throw into the stock pot.
