Mackerel is a very strongly flavored fish, somewhat oily, but quite delicious. This good sense Maine recipe adds just enough other flavors to make it a truly enjoyable seafood experience.

Baked Mackerel Maine Style
Recipe type: Seafood
Serves: 4
  • 2 mackerel, about 2 pounds each
  • 1 onion, large, finely chopped
  • 1 carrot, diced fine
  • 1/2 green pepper, chopped
  • 1 bay leaf
  • 3/4 Cup vinegar
  • 1/2 teaspoon salt
  • 1 Tablespoon parsley, chopped
  • 1/4 teaspoon thyme, minced
  1. Preheat oven to 400 degrees F. Make a sauce by cooking the onion, carrot, green green pepper, vinegar, salt, parsley, thyme and bay leaf for 20 minutes over low heat. Remove the bay leaf and pour sauce over fish.
  2. Bake for 30-40 minutes. Also for: Use Spanish mackerel, mullet or ultra-fresh Bluefish.
