Baked Catfish a la Meuniere is a classic Cajun recipe packed with incredible flavors and complex textural treats for the palate.  The truly enjoyable taste is a bayou blast!

Baked Catfish a la Meuniere

Ingredients
  • 4 catfish fillets (5 ounces each)
  • 1/4 Cup Parmesan cheese
  • 1 egg
  • 1 Tablespoon water
  • 1/2 Cup cracker meal
  • 1 Tablespoon lemon and herb seasoning
Meuniere Sauce
  • 3/4 Cup butter
  • parsley, minced
  • 2 Tablespoons green onions, chopped
  • 1/4 teaspoon salt
  • 3 Tablespoons lemon juice
  • 1/4 teaspoon white pepper
  • 1 dash hot pepper sauce
  • 1 dash Worcestershire sauce
  • 1 Tablespoon water
Garnish
  • 2 Tablespoons parsley, chopped
  • 1/4 Cup chopped pecans, lightly toasted
Instructions
  1. Thaw frozen fish according to package directions.
  2. Preheat oven to 350 degrees F.
  3. Beat egg and water together.
  4. Combine cracker meal, cheese and seasoning. Dip fish fillet in beaten egg, then roll in crumb mixture, covering completely. Set aside.
  5. For the sauce: Combine all ingredients and simmer 5 minutes.
  6. Pour half the Meuniere Sauce in shallow baking dish; place fillets in dish, turning once or twice to coat both sides well.
  7. Bake in oven 40 minutes or until fish flakes easily.
  8. Pour sauce over baked catfish, and add parsley and chopped pecans.
