Bacon-Wrapped Scallops with Pineapple Relish

Bacon-Wrapped Scallops with Pineapple Relish

  • 12 strips apple-wood smoked bacon
  • 12 jumbo diver scallops
  • olive oil, as needed
  • 1 Cup house-made or favorite barbecue sauce
  • Pineapple Relish, see recipe below
Pineapple Relish
  • 2 small pineapples, fresh, trimmed, cored, peeled
  • 1 red pepper, washed, seeded, cored, finely diced
  • 1 green pepper, washed, seeded, cored, finely diced
  • 1 small red onion, peeled, trimmed, finely diced
  • 1/2 bunch cilantro, minced
  • 2 ounces apple cider vinegar
  • 2 ounces canola oil
  • 1 jalapeno or other hot chili pepper, cored, seeded, minced (optional)
  1. Blanch bacon by plunging in boiling water for 2 to 3 minutes. Arrange on a baking sheet to cool.
  2. Wrap a slice of bacon around each scallop and secure with wooden pick. Arrange on baking sheet; lightly brush top of each scallop with oil.
  3. Broil until bacon is browned and scallops cooked, 3 to 4 minutes. Brush with sauce and glaze under broiler 1 minute. Serve with relish.
Pineapple Relish
  1. To make pineapple relish, combine diced pineapple flesh with diced red and green bell pepper, red onion, minced cilantro,cider vinegar and canola oil. A minced hot chili may be added, as desired.
Serves 4 as a main course and 6 as an appetizer.
