Au Gratin Potatoes and Ham

  • 6 medium potatoes, peeled, sliced (about 6 Cups)
  • 1 medium onion, coarsely chopped
  • 8 ounces cooked ham, cubed
  • 4 ounces shredded Cheddar cheese
  • 1 can cream of celery soup (or homemade celery gravy)
  • 1/2 Cup milk
  • 1/4 to 1/2 teaspoon fresh thyme leaves
  1. In 3 1/2- to 4-quart slow cooker, layer half each of the potatoes, onion, ham and cheese; repeat layers. In small bowl, mix soup, milk and thyme; pour over top.
  2. Cover; cook on High heat setting 1 hour.
  3. Reduce heat setting to Low.
  4. Cover; cook 6 to 8 hours longer or until potatoes are tender.
To make ahead, slice potatoes up to 12 hours ahead; cover with lightly salted acidulated water, and refrigerate. Chopped onion and shredded cheese can be refrigerated in separate covered containers. Drain potatoes thoroughly, and add to slow cooker when ready to cook.

Each slow cooker varies in performance. Check the potatoes at the minimum time (7 hours) to check for doneness to prevent overcooking.
