So easy to make it in the morning, and then 1/2 hour out of fridge before the party. Every event we served these at, they were the first thing gone. Everyone, young and old enjoys these delicacies.

Asparagus Appetizer Sandwiches

Asparagus Appetizer Sandwiches

Serves: 1 batch
Ingredients
  • 1 can or jar asparagus (long stems), or freshly prepared
  • 1 loaf good square white bread (very hearty and dense)
  • butter
  • mayonaisse
  • salt and pepper
Instructions
  1. Carefully remove asparagus spears from tin or jar, or use freshly cooked if preferred, spread on towel to drain for at least two hours; (if some are very "fat" split in half).
  2. Remove crusts from bread. Carefully spread each square with butter, and then spread carefully and generously with mayonaise.
  3. Take a spear and put diagonally on the bread - sprinkle generously with salt and pepper.
  4. Roll from corner to make a tube. Then cut the tube in half to make smaller portions - your choice.
  5. Pile in bowl or on plate, cover with aluminum foil. (Don't store in plasticware as it doesn't seem to have the same effect.) Refrigerate for several hours.
  6. Remove from the fridge at least 1/2 hour before serving.
