Apple Honey Marmalade
Recipe type: Jams and Jellies
Serves: 6
  • 4 Cups apple sauce made with Granny Smiths, Pippins or other firm apples and water (see below)
  • 2/3 lemon rind, grated with no white pith (may substitute julienned lemon peel, no pith)
  • 1 1/2 Cups honey, pure
  • juice of the lemon
  • 1/2 bottle fruit pectin
  1. Pare and slice apples. Add just enough water to prevent sticking. Cover and cook until apples are soft.
  2. Smash apples with a potato masher or spoon, but do not puree.
  3. Add grated rind and juice of lemon, and honey.
  4. Heat to boiling, stirring constantly. Boil hard 1 minute.
  5. Remove from the heat. Add fruit pectin. Stir 1 minute. Skim.
  6. Pour into sterilized jars and seal using typical canning methods.
You will need six pint-sized jars with covers to preserve this delicious marmalade.
