Apple Crisp with Ice Cream

Apple Cinnamon Raisin Crisp

  • 6 ounces unsalted butter, divided use
  • 4 golden Delicious apples, peeled and cored
  • 1/4 Cup brandy (optional)
  • 3/4 Cup brown sugar
  • 1/2 Cup raisins
  • 8 phyllo dough sheets
  • 1/4 Cup cinnamon sugar
  • 4 scoops premium vanilla ice cream
  • confectioners’ sugar, as needed
  • Chocolate Sauce, optional
  1. Melt 1/4 cup butter in medium saucepan until hot. Cook apple slices for 2 minutes; add brandy and flambé. Let simmer for 1 minute; add brown sugar and raisins. Let simmer until thickened; set aside.
  2. Melt remaining butter. Brush single phyllo sheet with melted butter, sprinkle with cinnamon sugar, then top with a second sheet. Repeat with remaining sheets. Diagonally cut into four strips to create a diamond pattern. Bake at 375 degrees F for 10 minutes, or until light brown.
  3. Lay strips of baked phyllo on large plate; add small amount of apple mixture, top with scoop of vanilla ice cream. Dust with powdered sugar and drizzle with chocolate sauce if desired.
