These delicious Almond Cookies are often served at the end of a wonderful Chinese meal. Simply delectable, subtle  flavor.
Almond Cookies

Almond Cookies (Hsin Jen Ping)

Serves: 20 cookies
  • 1 1/2 Cups flour
  • 1/2 teaspoon baking powder
  • 1/2 Cup sesame seed oil
  • 1/4 Cup ground almonds
  • 1/2 teaspoon almond extract
  • 1 pinch of salt
  • 3/4 Cup sugar
  • 1 egg
  • 20 whole blanched almonds
  1. Sift the flour and baking powder in a mixing bowl. Slowly add the oil and mix well. Add the ground almonds, almond extract, sugar, salt and whole egg and stir thoroughly.
  2. This should be a stiff dough, but if it is too stiff to work with, add a drop of water at a time until the dough is pliable.
  3. Form into small balls and press into cookies 1/2 inch thick and about 2 1/2 inches in diameter.
  4. Place an almond in the center of each cookie.
  5. Place on lightly greased cookie sheet and bake at 350 degrees in a preheated oven for about 15 minutes or until they are light brown in color.
  6. Cool and serve.
