Serves: 12 (2 loaves)
  • 2 pounds ground chuck or sirloin, 85% lean
  • 3/4 Cup oatmeal
  • 1 onion, peeled, chopped fine
  • 1/2 Cup ketchup
  • 1/4 Cup milk
  • 2 eggs, large
  • 1 Tablespoon horseradish
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 Cup ketchup
  • 1 Tablespoon horseradish
  • 3 Tablespoons brown sugar
  • 2 teaspoons mustard (prepared)
  1. Combine first 9 ingredients; shape into two 7 1/2 x 4-inch loaves. Place on a lightly greased rack of a broiler pan. Bake at 350 degrees for 40 minutes.
  2. Combine 1/2 Cup ketchup, 1 Tablespoon horseradish and remaining ingredients; spoon over meatloaf and bake an additional 5 minutes.
You may freeze the second loaf for up to 30 days. Wrap tightly before freezing.
