A delicious salad, this makes a great side with dinner or a perfect lunch. Top with grilled chicken, shrimp or steak slices to create a main course dinner.

Aegean Salad
Recipe type: Salads and Dressings
Serves: 4 to 6
  • Salad:
  • 1/2 Cup moist Greek olives
  • 4 Cups red leaf lettuce; torn into pieces
  • 4 Cups green leaf lettuce; torn into pieces
  • 1/2 Cup slivered mild red onion
  • 1 medium tomato; chopped
  • 1 small green pepper; seeded and slivered
  • 1/2 Cup crumbled Feta cheese
  • Oregano Dressing:
  • 1 Tablespoon red wine vinegar
  • 2 teaspoons lemon juice
  • 1 clove garlic; minced or pressed
  • 1/2 teaspoon salt
  • 1/2 teaspoon dried oregano
  • 1/8 teaspoon coarsely ground black pepper
  • 1/4 Cup olive oil
  1. To prepare salad, combine dressing with olives in a small bowl. Cover and let stand for 30 minutes at room temperature.
  2. In a salad bowl, combine lettuce, onion, tomato, and green pepper; set aside.
  3. To prepare Oregano dressing, mix vinegar, lemon juice, garlic, salt, oregano, and pepper in a small bowl. Using a whisk or fork, gradually beat in oil until well blended.
  4. Mix lettuce mixture lightly with olives and Oregano Dressing.
  5. Sprinkle with cheese.
Salad Yield: 4 to 6 servings. Dressing Yield: 1/3 cup.

Feta cheese is a little salty, so take care if adding salt or anything else that may be salty in nature.
