Zemi's Ginger Smoothies
 
Simple fruit smoothies flavored with ginger making them fresh, tropical and healthfully delicious.

Ingredients
ORANGE PINEAPPLE SMOOTHIE
  • 1/2 Cup orange juice
  • 1/4 Cup pineapple juice
  • 1/2 banana
  • 1/4 teaspoon ginger root; fresh, peeled, grated, crushed
APPLE COCONUT SMOOTHIE
  • 1/4 Cup apple juice
  • 1 pinch coconut; grated OR
  • 1 Tablespoon coconut milk *
  • 1/2 banana
  • 1/4 teaspoon ginger root; fresh, peeled, grated
  • 1/2 Cup crushed ice, or 2 small ice cubes
ORANGE-PINEAPPLE COCONUT SMOOTHIE
  • 1/4 Cup orange juice
  • 1/4 Cup pineapple juice
  • 1 Tablespoon coconut milk*
  • 1/2 banana
  • 1/4 teaspoon ginger root; fresh, peeled, grated
  • 1/2 Cup crushed ice, or 2 small ice cubes
Instructions
  1. * Can be made from fresh or dried coconut or purchased bottled.
  2. Do not use the canned coconut mix for mixed drinks as it is very sweet and different If using fresh coconut, cut coconut meat into 1" pieces and place equal amounts of coconut and hot water in food processor or blender.
  3. Puree at high speed for a couple of minutes, let steep for 30 minutes.
  4. Then pour into a strainer set over a bowl.
  5. Press on the pulp and squeeze by the handful to extract as milk as possible.
  6. Pour the milk through a fine-mesh strainer.
  7. For dried coconut: use 1 cup unsweetened, dried coconut with 1 1/2 Cup hot tap water.
  8. Allow to stand for 5 minutes.
  9. Puree one minute and proceed as above.
  10. Will keep up to three days refrigerated and indefinitely, if frozen.
  11. Blend all ingredients in a blender or food processor until smooth.
Notes
Ginger is one of nature's most curious plants. Rich in flavor, it also has many curative powers, and has been used in many cultures in both food and medicine for many centuries. The exotic flavor makes a spectacular smoothie.
