Vanilla Rum Liqueur is by all measure, one of the most perfect liqueurs one could possibly use in mixed drinks calling for rum or in desserts. It makes a glorious Piña Colada and adds superb flavor to a simple cup of tea or coffee.
The key is to use the finest possible vanilla beans. Select ones that are not too dry and still have some flexibility. This ensures that you can easily scrape out the seeds. After you’ve used the beans to make this liqueur, cut them up and scrape out the seeds for use in Vanilla Salt or vanilla puddings or custards.
- 3 Cups dark rum
- 5 split vanilla beans
- 1 1/2 Cups sugar
- 1 Cup water
- 1 Tablespoons finishing formula
- Age rum and vanilla for a month. Make simple syrup and allow to cool.
- Strain and combine with syrup. Age an additional month or two.
- If you like rum, this is a must.
