Vanilla Liqueur I
Vanilla liqueur is both incredibly flavorful and aromatic. One could just as easily drink it or dab it behind the ears as a perfume. The sweet vanilla flavor makes this idea for addition to many dessert recipes and surprisingly to Lobster Bisque, where it adds both a kick and a great taste sensation.

Serves: 7 1/2 Cups
- 3 Cups water
- 1 1/2 Cups brown sugar - (packed)
- 1 Cup granulated sugar
- 1 vanilla bean - (8") split lengthwise
- or 2 Tablespoons vanilla extract)
- 1 Quart light rum
- In a medium saucepan, combine water, brown sugar, granulated sugar and vanilla bean. Bring to a boil; boil for 5 minutes, stirring until sugars dissolve. Let cool.
- Pour into 2-quart jar with a tight-fitting lid. Stir in rum; cover. Let stand at least 2 weeks at room temperature before serving.
- Serve as a liqueur, over ice cream or pudding, or as a flavoring for milk drinks.
