Tangerine, Grapefruit, Lemon and Orange Digestif

  • zest of 5 tangerines in wide pieces
  • zest of 5 grapefruit in wide pieces
  • zest of 5 lemons in wide pieces
  • zest of 5 oranges in wide pieces
  • 10 Cups sugar
  • 10 Cups water
  • 3 bottles Nandini grappa
  1. Make simple syrup of 10 cups sugar and 10 cups water by heating both together until clear.
  2. Allow to cool.
  3. Arrange eight 1-quart bottles and place 1/2 of each zest in each bottle.
  4. Divide simple syrup among bottles and top each with grappa.
  5. This recipe yields 8 quarts -- 2 quarts of each citrus variety.
