Spice Cordial brings all the best warmth and affection to the cooling season. As the leaves turn gold and red, this drink soothes the soul with flavors of the season. The combination of chipotle and orange with hints of vanilla and depth from the Bourbon offer a glorious mixture that tantalizes yet satisfies the palate. Adapted from Kara Newman’s cocktail book, Spice & Ice: 70 Tongue-Tingling Cocktails (Chronicle Books).

Spice Cordial
Recipe type: Alcoholic Cocktails, Syrups
Serves: 1
  • 1 ounce Vanilla Liqueur (see recipe)
  • 1 ounce Bourbon
  • 3/4 ounce Chipotle-Orange Syrup (recipe follows)
  • 2 dashes Angostura orange bitters
  • orange peel, for garnish
Chipotle-Orange Syrup
  • 2 Cups water
  • 1 chipotle pepper
  • 2 strips orange peel
  • 3/4 Cup sugar
  1. In a cocktail shaker, combine vanilla liqueur, bourbon, syrup and bitters.
  2. Shake together with ice; strain into a glass.
  3. Garnish with the orange peel.
Chipotle-Orange Syrup
  1. In a small pot, bring the water to a boil. Reduce to a simmer, add chipotle and peel. Cover; simmer for 15 to 20 minutes.
  2. Strain with a fine-mesh sieve.
  3. Mix in sugar.
  4. Return to a boil, stir until the sugar dissolves. Remove from the heat, cool completely. Refrigerate until needed.
The Chipotle-Orange Syrup yields 2 cups.
