Roasted Golden Beet Spritzer

  • 2 ounces Roasted Golden Beets (recipe follows)
  • 8 ounces seltzer or carbonated water
  • 1 sprig mint
Roasted Golden Beets
  • 1 pound golden beets, peeled, sliced
  • parchment paper
  1. Fill a tall glass part way with beets and ice cubes; pour seltzer or carbonated water over the top.
  2. Garnish with mint sprig.
Roasted Golden Beets
  1. Preheat oven to 375 degrees F.
  2. Place a sheet of baking parchment in a jelly-roll pan and spread the slices of beet around the pan.
  3. Roast for 25 minutes or until soft. Do not burn. The beets will caramelize.
  4. Allow to cool. Remove from the parchment with a spatula. Refrigerate. Use as needed. Stores in a container in the refrigerator for 3 days.
