Mint Syrup

Without food colouring, this syrup is crystal clear.

Serves: 1 bottle
Ingredients
  • 8 Cups mint leaves, fresh; chopped
  • boiling water
  • 8 Cups sugar
  • water
  • green food colouring (optional to make the syrup green)
  • 3 Tablespoons mint essential oil or mint extract
Instructions
  1. Place chopped mint leaves in a crock or deep bowl; add boiling water.
  2. Place a flat dish over the leaves and weight them down.
  3. Allow to stand overnight.
  4. Bring sugar and 3 cups water to a boil and cook 10 to 15 minutes.
  5. Meanwhile, squeeze the juice from the mint leaves; add mint juice to the syrup, bring to a boil, cook 5 minutes and remove from heat.
  6. Strain and discard leaves.
  7. Add green food color to make the syrup a bright green.
  8. Add the mint oil and stir.
  9. Pour into sterile bottles.
  10. Refrigerate.
  11. Syrup is ready to use.
  12. Dilute with cold water or sparkling water.
