The Bishop cocktail was originally created at the Old Waldorf-Astoria Hotel in New York City. Blending rum, red wine and citrus, it makes a great drink.

- 2 ounces light rum
- 2 ounces Burgundy red wine
- 1 teaspoon Simple Syrup
- juice of 1/2 lime
- Pour the ingredients into a cocktail shaker filled with ice.
- Shake well.
- Strain into a chilled red wine glass or coupe.
- Garnish with orange or lemon peel.
