The Chinese call the Longan “Dragon’s Eye” because when cut open, it looks like an eye, with a dark color center, an opalescent berry and hard shell outside. They’re quite tasty, but often used in making juices and syrups.
- 6 Cups water
- 1 packages dried longans (2 1/2 ounces); available at Asian markets
- 1 1/2 Cups sugar
- Simmer 20 minutes.
- Stir in sugar.
- Chill thoroughly, 1 hour.
- Pour over ice and serve immediately.
