Hot Port Flip

  • 3 fluid ounces port,madeira or marsala
  • 1 egg
  • 1 teaspoon superfine sugar
  • 2 fluid ounces heavy cream
  • 1 pinch grated nutmeg
  1. Heat wine in saucepan, but do not boil.
  2. Beat egg with sugar in a bowl using a whisk, blend in cream, and pour into saucepan with wine, stirring constantly.
  3. Serve in a warmed mug and sprinkle with nutmeg.
