Egg Cream

  • 1/3 Cup cold milk
  • 3 Tablespoons chocolate (or vanilla) syrup
  • seltzer water *
* cold, unflavored sparkling water (seltzer, club soda, NOT mineral water)
  1. Pour the milk and syrup into a tall glass.
  2. Stir to combine, and then pour in the sparkling water.
  3. Serve immediately.
The egg cream is a distinctly New York invention of great simplicity. Surprisingly, most people out of New York don't get this recipe correct, adding such things as whole eggs, powdered egg white, whipped egg white, sugar, fresh fruit, whipped cream, shaved chocolate, maraschino cherries. Any New Yorker would laugh at such concoctions.
