Coconut Toastie

  • 1 ounce light Rum
  • 5 Tablespoons vanilla ice cream
  • 1/4 ounce whipped cream
  • shredded coconut
  1. Combine all ingredients (except coconut) in an electric blender and blend at a low speed for a short length of time.
  2. Pour into a chilled champagne flute, garnish with shredded coconut, and serve.
