Carambola Cooler

Ingredients
  • 4 Cups coarsely chopped Carambola (starfruit) (1 pound)
  • 1/3 Cup sugar
  • 3/4 Cup club soda; chilled
  • 3 slices carambola (optional)
Instructions
  1. Combine carambola and sugar in food processor, and process 1 minute or until smooth.
  2. Strain mixture through a sieve into a bowl, reserving 1-1/4 cups juice; cover and chill.
  3. Discard solids.
  4. Add club soda to size: 2/3 cup.
  5. NOTES : Garnish with carambola slices, if desired.
  6. Serve immediately.
